Özyeğin University Faculty Member Dr. Candan Türkkan’s Book “Feeding Istanbul” Published in Turkish

Assistant Professor Candan Türkkan from the Department of Gastronomy and Culinary Arts at Özyeğin University published her book Istanbul’u Doyurmak: Gıda İaşesinin Politik Ekonomisi by Iletisim Publishing in July 2023. Istanbul’u Doyurmak is the Turkish version of Dr. Candan Türkkan’s book Feeding Istanbul: The Political Economy of Urban Provisioning, which was published by Brill Academic Publishers in 2021. Dr. Türkkan translated the Turkish version of the book herself.

In her book, Dr. Türkkan focuses on “urban food provisioning,” the strategy of protecting the city from famine and hunger through supply-side economics, by offering consumers a broad range of products at cheap prices from the mid-15th century until the 19th century in Istanbul, which served as the capital of the Ottoman Empire for centuries. Claiming that the urban food provisioning food regime is a management policy that the sovereign implemented to exist and survive, Dr. Türkkan analyzes the transformation of this system over the centuries through the empire’s unique political economy as well as the social and political consequences of this transformation. In addition to primary resources, Dr. Türkkan also utilizes the methods of history, anthropology, and geography to study this food system as she traces the dissolution of the provisioning system in the 19th century and provides an in-depth analysis of the food regime in a historical time frame, spanning from the empire to the new Republic times.
